A French Chef Who Found a Second Home in Mexico
Born in France, Alexis Preschez trained at the prestigious Institut Paul Bocuse, one of the world’s leading culinary institutions.
He began his professional career in Paris at the renowned kitchen of Guy Savoy, before expanding his international experience in Australia and eventually establishing himself in Mexico.
Today, as Executive Chef of Sofitel Mexico City Reforma, Preschez has developed a culinary philosophy rooted in French precision while embracing Mexico’s extraordinary diversity of seasonal ingredients. That same philosophy now takes center stage at Le Bistro Palacio through this exclusive collaboration.
A Three-Course Journey Through French Cuisine
The experience begins with a glass of Taittinger Champagne, setting the tone for an afternoon inspired by the elegance of French dining.
The first course features a beautifully executed Camembert en Croûte, prepared with locally produced Camembert from Rancho Cuatro Encinos, blue cheese, caramelized onions and criolla pear, accompanied by fresh greens, roasted cherry tomatoes, figs and a whole-grain mustard vinaigrette.
Rich yet remarkably balanced, the dish pairs effortlessly with Maison Castel Rosé d’Anjou AOP, whose bright acidity and delicate fruit notes complement the creamy cheese without overwhelming its character.
The main course showcases one of the menu’s highlights: Chicken Supreme with Wild Mushrooms and Gratin Dauphinois.
A perfectly cooked chicken ballotine filled with mushroom mousseline is served alongside sautéed wild mushrooms, Comté potato gratin and a silky chicken jus. It is a dish that perfectly captures Preschez’s culinary identity—deeply respectful of French tradition while naturally incorporating exceptional Mexican ingredients.
The accompanying Maison Castel Pinot Noir IGP Pays d’Oc enhances the earthy flavors of the mushrooms with elegance and restraint.
Dessert concludes the experience on a classic note.
The Chocolate Coulant with Red Berries and Chocolate Ice Cream balances the richness of molten chocolate with the brightness of fresh berries and the delicate crunch of cocoa sablé, while a Maison Castel Merlot IGP Pays d’Oc adds layers of ripe fruit that complement the dessert beautifully.
