Three delicious recipes for a healthy lunch

After the chocolates, sweets, and breads of Halloween and the Day of the Dead, it is necessary to reduce the consumption of refined sugar and other processed foods and ensure that our children consume a healthy and delicious lunch and prevent them from reaching the holidays and their excesses. Poor nutrition forms a bad habit that accompanies them in their growth. For this reason, our friends from Disney and El Huerto Palacio share three delicious recipes for a healthy lunch by Valentina Lepage and Ana Paola Farfán.

OMELETS / OAT CREPES

INGREDIENTS:

  • Oats flakes.
  • Beets (if you want them to be pink).
  • Spinach (if you want them to be green).

PROCEDURE:

  • Grind 1 cup of oats until it becomes like flour, and add water slowly.
  • Knead very well and shape.
  • Let it rest and start forming the tortillas.
  • Set them in the pan, previously heated and with medium or low heat.

SALTY CREPES:

Turkey breast / Avocado / Panela cheese / Pico de gallo / Spinach.

SWEET CREPES:

Ricotta Cheese / Strawberries or Banana and Almonds or Almond Cream.

MINI HOT BANANA CAKES

INGREDIENTS:

  • 1 Banana.
  • 1 Cup of the mix for your hot cakes can be normal or oatmeal.

PROCEDURE:

  • Cut the banana into slices.
  • Dip each banana slice into the mixture.
  • Place in the pan on both sides until well cooked.

CARROT CAKE MUFFIN

INGREDIENTS:

  • 3 Tablespoons of oat flour.
  • One egg.
  • ½ Cup of grated carrot.
  • 2 Tablespoons of milk.
  • One teaspoon of cinnamon and baking powder.

PROCEDURE:

  • Mix and incorporate all the ingredients.
  • Lightly grease a microwave-safe mug and pour the mixture into it.
  • Microwave at high power for 2 minutes.
  • Let cool, unmold, and decorate.
