The history of chiles en nogada is one with Puebla’s. This baroque dish, with its patriotic colors and unique blend of tradition and sophistication, has transcended generations to become a symbol of Mexican identity. But in Atlixco, a Pueblo Mágico at the foot of Popocatépetl Mountain, this gastronomic experience takes on a special brilliance every year thanks to the initiative of Tesoros de México, which will celebrate its tenth edition of the chiles en nogada season in 2025.


A Decade of Flavor and Tradition
For the past ten years, eight boutique hotels in Atlixco, El Sueño, Casa Reyna and La Purificadora among them, have joined together under the Tesoros de México label to reinterpret the traditional chile en nogada. Each establishment offers a unique version, respecting the essence of the original recipe—a poblano chile stuffed with seasonal picadillo, topped with the iconic nogada (nutty sauce), pomegranate, and parsley—but taking it to the realm of creativity and haute cuisine.




The offering is more than gastronomic: it’s cultural, touristic, and experiential. During August and September, Atlixco becomes a meeting point for national and international travelers looking to savor the flavors of the season, enjoy boutique hospitality, and immerse themselves in the colonial charm of this Pueblo Mágico (Magical Town).
